Ingredients

1/3 cup chia seeds
1/2 cup rolled oats
2 cups milk, of choice (almond or coconut work well!)
1 pinch salt
1/4 teaspoon vanilla extract
1 fresh orange, supremed
1 fresh mango, cut into small chunks
1/4 cup unsweetened flaked coconut
1/4 cup pepitas
Preparation

Combine chia, oats, milk, vanilla, salt in a container and leave to set overnight or for at least 20 min.
When ready to serve, toast coconut flakes in a dry pan on the stove over low heat for 3 minutes. Watch them closely!
Divide pudding into two containers. Top with orange, mango, pepitas, and coconut flakes before serving.
