Tropical Quinoa (Ww) - cooking recipe
Ingredients

2 cups water
1 cup quinoa, rinsed
2 teaspoons olive oil
3/4 teaspoon salt
1/8 teaspoon pepper
1 papaya, peeled, seeded and diced
1 red bell pepper, diced
2 scallions, sliced
2 tablespoons cilantro, chopped
1 tablespoon rice wine vinegar
1/2 teaspoon orange zest, grated
Preparation

In a saucepan bring the water and the next 4 ingredients (quinoa - pepper) to a boil. Reduce heat and simmer, covered for 20 minutes or until tender. Drain.
Fluff the quinoa with a fork and then transfer to a salad bowl.
Add the remaining ingredients (papaya - grated orange peel); toss.
