Ingredients

1 egg
butter, 3/4 stick, softened
6 tablespoons brown sugar
1/2 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick-cooking oats
3 tablespoons pineapple juice
1/2 teaspoon cinnamon
1/2 cup pineapple tidbits, well drained
Preparation

Cream butter and sugar together. Beat in egg and vanilla.
Sift together the flour, baking powder and salt. Stir flour mixture into the batter.
Add remaining ingredients. Combine well.
Drop by rounded teaspoonfuls onto parchment lined cookie sheets. Flatten slightly.
Bake for 12-15 minutes at 350 degrees.
