Winter Warm-Up Beef Simmer - cooking recipe

Ingredients
    1 cup onion, chopped
    6 bacon, slices cut into 1/2-inch pieces
    3 lbs beef chunk roast, trimmed cut into 2 1/2-inch in pieces
    8 medium red potatoes, halved
    3 medium carrots, cut into 1-inch pieces
    3 medium onions, halved
    8 ounces fresh mushrooms, halved
    1/2 cup fresh parsley, chopped
    1 cup apple juice
    10 1/2 ounces beef broth
    6 ounces tomato paste
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon thyme leaves
    1 teaspoon fresh garlic, minced
    2 bay leaves
Preparation
    heat oven to 325*F.
    in Dutch oven place onions, bacon and roast. cook over med-high heat, stirring occasionally until bacon and roast are browned.
    stir in vegetables.
    stir in remaining ingredients, cover, bake for 1 1/2 hours.
    uncover continue baking, stirring occasionally for 2 to 2 1/2 hours or until roast is fork tender.
