Daphne’S Cinnamon Oatmeal Muffins - cooking recipe
Ingredients

1 cup oat flour
1 cup white whole wheat flour
2 cups quick oats
1/4 - 1/3 cup sucanat or 1/4-1/3 cup brown sugar
2 tablespoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
6 tablespoons olive oil
2 eggs, beaten with fork
2 cups low-fat milk
Preparation

Combine dry ingredients (oat flour through salt) in mixing bowl.
Add remaining ingredients and stir just until moistened.
Divide batter between 24 greased muffin cups, and let rest for 15 minutes.
Bake at 425 degrees for 15-20 minutes or until muffins test done.
