Dark Cherry Balsamic Vinaigrette - cooking recipe

Ingredients
    1/2 cup balsamic vinegar
    1/4 cup granulated sugar
    1 garlic, cloved minced
    1/2 cup cherry preserves
    1/4 cup red wine vinegar
    1 cup canola oil
    kosher salt
    pepper
Preparation
    In a medium saucepan on medium high heat add vinegar, sugar and garlic till boiling then simmer till reduced by half. Add preserves and cook 1 minute. Remove from heat and cool to room temperature. Whisk in red wine vinegar and then canola oil. Season with salt & pepper.
