Cucumber Chips - cooking recipe

Ingredients
    3 medium cucumbers, sliced thin (pared)
    2 eggs, beaten
    1 teaspoon salt
    1/4 teaspoon pepper
    1 cup cracker crumb, finely ground
    1/4 cup grated parmesan cheese
    oil, for deep fat frying
Preparation
    Combine eggs, salt and pepper. Mix crumbs and cheese in a paper bag. Dip cucumbers slices in egg mixture, then shake in bag of crumbs until coated. Heat 1/4\" oil in heavy skillet. Fry cucumber slices until tender and golden. Serve hot as an appetizer or vegetable.
