Goat Cheese Potato Cakes With Smoked Salmon - cooking recipe

Ingredients
    3 cups mashed potatoes
    1 1/4 cups milk
    1/3 cup crumbled goat cheese
    1/3 cup chopped smoked salmon
    1 tablespoon chopped fresh dill
    1/4 teaspoon pepper
    2 tablespoons butter
Preparation
    In a medium saucepan, combine potatoes and milk. Bring to a boil over medium high heat and cook, stirring, until smooth, about 3 minutes.
    Off heat, beat in goat cheese, smoked salmon, dill and pepper.
    In a large skillet, melt butter. Shape potato mixture into 6 patties 1/2 inch thick.
    Cook over medium-low, turning once, until golden brown on both sides, about 6 minutes total. Serve hot.
