Sazon Goya Beans And Rice - Vegan - cooking recipe

Ingredients
    1 tablespoon olive oil
    1 onion, diced
    2 garlic cloves, minced
    1 bell pepper, diced (any color, I like red best)
    1 1/4 tablespoons sazon goya
    1/3 cup chopped cilantro, vary amount to taste
    2 limes, cut in 8ths vary amount to taste
Preparation
    Saute onions in olive oil for 2 minutes.
    Add garlic and bell pepper and saute 3 minutes.
    Stir in 2 cans of beans (including the liquid) and the sazon goya spice mix.
    Simmer for 10 minutes - more for softer beans - less for firmer beans.
    Serve over brown rice and top with chopped cilantro. I like to squeeze several drops of lime juice on every bite, but I'm a hard-core citrus lover. :-).
