Cowboy Caviar - cooking recipe

Ingredients
    2 (15 1/2 ounce) cans black-eyed peas, drained and rinsed
    1 small jalapeno pepper, finely minced
    2 garlic cloves, minced
    4 tablespoons apple cider vinegar
    3 tablespoons canola oil
    3 green onions, finely chopped
    salt and pepper
    1/2 cup red pepper, chopped
    juice of one lime
Preparation
    Combine all ingredients in a large bowl. Adjust salt and pepper. Serve with tortilla chips.
