Vitalbrot - cooking recipe

Ingredients
    400 g whole wheat flour
    100 g white flour
    2 teaspoons salt
    30 g flax seeds
    1/2 teaspoon coriander
    1/16 liter milk
    250 g plain yogurt
    40 g fresh yeast cakes
    1 teaspoon sugar
    30 g flax seeds
Preparation
    Mix whole wheat flour and white flour together with 2 teaspoons salt, 30 gr. flax seed and 1/2 teaspoons coriander.
    Mix milk and joghurt together in a saucepan and warm. Add yeast and sugar, stir until completely combined.
    Pour milk mixture, little by little into flour and knead thoroughly. The dough will be very firm. (I ended up adding about 50ml more milk).
    Let dough rise, covered, in an oven set at 30\u00b0C for 2 hours. After 2 hours punch the dough down and knead once more. Form into a round loaf.
    Brush the loaf with water and sprinkle with the remaining flax seed. Press softly into dough.
    After you have shaped the dough into a loaf preheat the oven to 200\u00b0C Bake the bread on the middle rack for 50-60 minutes.
    This bread is very crusty.
