Quick Chickpeas Salad - cooking recipe

Ingredients
    1 1/2 cups canned chick-peas, drained and rinsed
    1 tablespoon Dijon mustard
    3 tablespoons fresh lemon juice
    3 tablespoons extra virgin olive oil
    3 tablespoons red wine vinegar
    2 garlic cloves, minced
    1/2 cup chopped fresh parsley
    1 cup thinly sliced red onion
    1 red bell pepper, diced
    salt
    fresh ground black pepper
Preparation
    In a large bowl, whisk together the mustard, lemon juice, olive oil and vinegar, stir in the garlic, parsley, onion and bell pepper.
    Gently toss the beans and dressing and season with salt and pepper to taste.
    Serve chilled or at room temperature.
