Moist Banana Bread - cooking recipe

Ingredients
    2 eggs, beaten
    1/3 cup buttermilk
    1/2 cup vegetable oil
    1 cup mashed banana (about 2-2 1/2 medium bananas)
    1 1/2 cups white sugar
    1 3/4 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup chopped nuts (optional)
Preparation
    Preheat oven to 325 degrees.
    Spray one 9 X 5 inch loaf pan with non-stick cooking spray.
    Blend together the eggs, buttermilk, oil and bananas.
    Sift together the sugar, flour, baking soda and salt.
    Add to banana mixture.
    Stir in nuts.
    Mix well.
    Pour into prepared loaf pan.
    Bake 1 hour and 20 minutes, or until a cake tester inserted in center comes out clean.
