Low Fat Prune And Fruit Muffins - cooking recipe

Ingredients
    1/2 cup natural bran
    1/2 cup prune juice
    1/2 cup skim milk
    1/4 cup packed brown sugar
    2 egg whites, lightly beaten
    1 cup flour
    1/2 cup whole wheat flour
    2 teaspoons baking powder
    1 teaspoon nutmeg
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1/4 cup unsweetened applesauce
    1 cup seedless raisin
    1/2 cup chopped walnuts
Preparation
    Mix bran, prune juice, skim milk and brown sugar.
    Set aside for ten minutes.
    Stir in beaten eggs, flours, baking powder, nutmet, cinnamon and salt.
    Blend thoroughly.
    Stir in apple sauce raisins and walnuts.
    Spoon equally divided into greased muffin tins.
    Bake in 425 degree oven for 15-20 minutes until lightly brown and springy to the touch.
