Sherried London Broil With Herb Butter - cooking recipe

Ingredients
    1 (3 lb) london broil beef, 2 to 2 1/2 inches thick
    Marinade
    4 tablespoons oil
    1 cup dry sherry
    1 clove garlic, minced
    1 onion
    1 teaspoon dried rosemary
    10 black peppercorns
    Herb Butter
    1/4 cup butter, softened
    2 teaspoons fresh parsley
    2 teaspoons chives, minced
    2 teaspoons dry sherry
    1 dash hot sauce
Preparation
    Combine marinade ingredients in a flat shallow dish.
    Cover and marinate in the refrigerator for 8 hours or overnight, turning the meat occasionally.
    Allow the meat to stand for one hour at room temperature.
    Broil/grill 5- 10\" mins per side, depending on your preference for doneness.
    Spread the soft herb butter over the meat and slice across the grain.
