Roasted Red Pepper Hummus Soup - cooking recipe

2 roasted red peppers
3 garlic cloves
1 (16 ounce) can garbanzo beans
1 onion
2 cups chicken broth
1/4 teaspoon kosher salt
2 tablespoons olive oil
Preparation

Roast the red peppers.I smoked mine on a Traeger. Saute onion, garlic in olive oil over medium heat. Add beans (with liquid), roasted peppers, and broth (If not vegetarian, use chicken broth). Blend. Garnish with diced tomatoes and feta cheese. Serve.
