Cajun Special Bean Salad - cooking recipe
Ingredients

16 ounces dark red kidney beans, drained
1 small vidalia onion, chopped
1 large dill pickle, chopped
2 hard-cooked eggs, chopped
1 jalapeno pepper, diced
1/2 teaspoon salt
1/2 cup mayonnaise, more or less
Preparation

Combine all ingredients, binding with mayonnaise.
Refrigerate for a couple of hours; serve cold with hot biscuits or cheese toast.
