Zucchini Bread - cooking recipe

3 eggs
1 cup oil
2 cups sugar
3 cups grated zucchini
3 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon
1/4 teaspoon baking powder
1/2 cup nuts
1/2 cup coconut
1/2 cup chopped dates or 1/2 cup raisins
Preparation

Beat eggs until light and foamy.
Add oil, sugar, zucchini and vanilla.
Mix slightly, but well.
Sift together flour, salt, cinnamon, baking soda and baking powder.
Mix until blended.
Add nuts, coconut and dates.
Blend well.
Grease two loaf pans.
Bake at 350 degrees for 1 hour.
Remove from pan. Cool on rack. Don't overbake - it drys out.
