Rhubarb Muffins - cooking recipe
Ingredients

1 egg
1 1/2 cups brown sugar
2/3 cup vegetable oil
1 teaspoon vanilla
2 cups finely chopped rhubarb
2 1/2 cups flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sour milk
Sugar Topping
1/3 cup sugar
1 1/2 teaspoons cinnamon
Preparation

In a large bowl beat egg, sugar, oil and vanilla until light and fluffy.
Add rhubarb.
Stir in dry ingredients.
Stir in milk.
Fill well greased muffin pans 3/4 full.
Mix together sugar and cinnamon and sprinkle over muffins.
Bake at 350\u00b0F for 25 to 30 minutes.
