Asparagus-Apple Salad With Blue Cheese Vinaigrette - cooking recipe

Ingredients
    1/4 cup crumbled blue cheese
    2 tablespoons chopped fresh parsley
    2 tablespoons white vinegar
    1 tablespoon water
    1 teaspoon sugar
    2 teaspoons Dijon mustard
    1 teaspoon extra virgin olive oil
    1/4 teaspoon salt
    1/4 teaspoon fresh ground black pepper
    2 cups diagonally cut asparagus (2-inch)
    4 cups butter lettuce, torn (I use field greens)
    2 cups gala apples, thinly sliced
Preparation
    Combine first 9 ingredients, stirring with a whisk.
    Cook asparagus in boiling water 1 minute. Drain and rinse under cold running water; drain. Combine the asparagus, lettuce, and apple in a large bowl. Drizzle with vinaigrette; toss gently to coat.
