Basic Demi Glace - cooking recipe

Ingredients

1 quart brown stock (beef, veal)
1 quart brown sauce

Preparation

Combine the stock with the sauce over medium heat.
Simmer until the mixture is reduced by half.
Strain and immediatly cool in a water bath.
