Cheddar & Scallion Mashed Potatoes - cooking recipe

Ingredients
    2 lbs potatoes, peeled and cut into large chunks
    6 scallions, finely chopped
    1/4 cup butter
    1 cup cheddar cheese, shredded
    salt and pepper (to taste)
Preparation
    Cook potatoes in boiling salted water for 15-20 minutes, or until tender. Drain well. Return to pan and mash until smooth.
    Beat in scallions, butter and cheese over low heat, until combined and cheese is melted.
    Season with salt and pepper to taste.
