Gingerbread Breakfast Loaf - cooking recipe

1 3/4 cups all purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 teaspoon nutmeg
1/4 teaspoon clove
1 cup milk, room temperature
1/2 cup molasses
1/4 cup oil
1/4 cup applesauce
2 large eggs or 1/2 cup egg substitute
3/4 cup brown sugar
1 tablespoon grated fresh ginger (optional)
chopped walnuts, for topping (optional)
Preparation

Preheat oven to 350\u00b0F Grease a 9x5 loaf pan.
Sift together flours, baking powder, ground ginger, baking soda, salt, and spices.
Whisk together milk, molasses, oil, applesauce, eggs, brown sugar, and grated ginger (if using).
Fold liquid mixture together with flour mixture, taking care not to over-mix.
Pour batter into prepared pan. Bake for about 1 hour.
