Rhubarb Nut Muffins - cooking recipe
Ingredients

1 1/2 cups flour
3/4 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 egg
1/2 cup buttermilk
1 teaspoon vanilla
1 cup diced rhubarb (fresh)
1/2 cup chopped walnuts
Topping
1/4 cup packed brown sugar
1/4 cup chopped walnuts
1/2 teaspoon cinnamon
Preparation

Combine all ingredients except the topping and mix well.
Fill greased muffin cups 3/4 full.
Then sprinkle topping over the top and bake at 375 degrees for 20 to 25 minute.
