Pork With Almond Sauce - cooking recipe

Ingredients
    1/2 teaspoon canola oil
    1/2 lb pork tenderloin, trimmed of fat
    1/4 teaspoon salt, divided
    1/4 teaspoon ground black pepper
    1/2 cup almond butter
    4 tablespoons water
    5 tablespoons low sodium soy sauce
    4 tablespoons rice vinegar
    1 tablespoon fresh ginger, peeled and minced
    3 teaspoons chili-garlic sauce
    1 cup green onion, thinly sliced
    1/2 cup of fresh mint, finely chopped
Preparation
    Preheat oven to 425\u00b0F.
    Drizzle oil in an ovenproof skillet. Sprinkle pork with 1/8 teaspoon salt and pepper; place pork in pan. Bake at 425\u00b0 for 10 minutes. Turn pork over, and bake an additional 10 minutes or until a thermometer registers 155\u00b0F Place pork on a cutting board; let stand 10 minutes. Cut pork into bite-sized pieces.
    Combine almond butter, water, remaining salt, soy sauce, vinegar, ginger and chili garlic sauce.
    Place your favorite cooked hot noodles (or rice) in 4 bowls; top evenly with sauce, pork, onions, and mint.
