Snow Crab Cakes - cooking recipe

Ingredients
    1 lb broken snow crab legs
    1 cup fresh breadcrumb
    1/2 cup minced red onion
    1/4 cup minced celery
    1/4 cup minced red pepper
    1/4 cup chopped chives
    2 egg yolks
    2 tablespoons butter
    1/8 teaspoon hot sauce
    1 teaspoon Worcestershire sauce
    salt & pepper
Preparation
    Sweat vegetables in butter until tender. (cool).
    Combine crab, crumbs, vegetables, egg yolks and seasonings.
    Mould in to desired shapes.
    Dredge in seasoned flour, egg wash and dehydrated potato flakes.
    Deep fry until golden brown.
