Oven-Baked Red Skin Potatoes - cooking recipe

Ingredients
    2 lbs red potatoes, cut as long wedges
    1/3 cup olive oil
    1 large onion, chopped
    1 teaspoon coarse kosher salt
    fresh ground pepper
Preparation
    Pre-heat oven to 400.
    Combine ingredients in 9x13 roasting dish.
    Bake uncovered, stirring occasionally, for 45-50 minutes or until potatoes are soft and golden brown.
