Quinoa With Roasted Yello Pepper Sauce - cooking recipe

Ingredients
    1 yellow bell pepper
    1 tablespoon olive oil
    1/2 onion
    3 garlic cloves, crushed
    1 1/3 cups chicken broth
    salt and pepper
    1 cup quinoa, rinsed and toasted
Preparation
    Preheat oven to 350 degrees.
    Roast Yellow pepper and peel the blistered skin.
    Saute the onions in olive oil until translucent.
    Put the pepper, onion, and garlic in the blender with the broth.
    Salt and Pepper to taste.
    Blend until smooth.
    Put the quinoa into a casserole dish, pour the pepper sauce over it; mix well.
    Tightly cover with lid or foil.
    Bake for 45 minutes.
