Slimming World Friendly Smoky One Tray Pork And Vegetables - cooking recipe

737 g new potatoes (thinly sliced)
3 mixed peppers (deseeded and sliced)
1 aubergine (cut into chunks)
1 courgette (cut into chunks)
7 ounces baby onions (peeled and quartered)
3 small rosemary sprigs
3 bay leaves
2 teaspoons smoked paprika
1 small garlic (cut in half horizontally)
low-fat cooking spray
salt and pepper
800 g pork tenderloin, fillet (all visible fat removed cut into 1 inch)
Preparation

Preheat oven to gas mark 7, add all ingredient EXCEPT for the pork and spray with low fat cooking spray season to taste.
Roast for 10 minutes. Shake the tray and add the pork pieces. Cook for a further 10 minutes. Turn down oven to gas mark 4 and bake for 20 minutes shaking occasionally.
Discard bay leaves and squeeze garlic out of the halved bulbs, mix with the meat and veg. divide into 4 bowls and serve.
