Roasted Beets - cooking recipe

Ingredients
    2 lbs beets, raw
    1 large onion
    1 tablespoon olive oil
    2 teaspoons coarse salt
    1/2 teaspoon black pepper
    2 tablespoons balsamic vinegar
Preparation
    Peel the beets and cut into 1/2 inch cubes.
    Halve and slice the onion.
    Toss the vegetables with the oil, salt, pepper and vinegar.
    Bake in a single layer in a roasting pan at 400 degrees for 45 minutes, stirring several times.
