Rich'S Sweet And Spicy Tuna Salad Sandwiches - cooking recipe

Ingredients
    2 (12 ounce) cans tuna fish (thoroughly drained)
    1 carrot (chopped)
    3 shallots (peeled and chopped)
    1 lemon, rind of (grated)
    1/2 lemon, juice of
    1 small jalapeno pepper (seeded and finely chopped)
    3 stalks celery (chopped)
    1 roma tomato (chopped)
    1 pinch fresh coarse ground black pepper
    1 small green bell pepper (chopped)
    4 tablespoons canola oil mayonnaise (high oleic if possible)
    3 tablespoons sweet pickle relish
    6 large romaine lettuce leaves (cut in half)
    12 slices whole wheat bread (toasted whole grain)
Preparation
    Combine everything in a large bowl except for the lettuce and bread. Put lettuce and tuna salad on toasted bread, and enjoy.
