Turkey And Mango Salad - cooking recipe
Ingredients

100 g snow peas
2 green spring onions, sliced
3 stalks celery, thinkly sliced
2 cups shredded leftover cooked turkey (280g)
1 large mango, thinly sliced
2 tablespoons slivered almonds, toasted
2 tablespoons dried sweetened cranberries
Curry Dressing
2/3 cup mayonnaise
1 tablespoon mango chutney
1 teaspoon curry powder
1 tablespoon water
salt
pepper
Preparation

To make curry dressing, combine all ingredients in a small bowl. Stir well.
Place snow peas in a small heatproof bowl and pour over enough boiling water to cover. Stand snow peas for 30 seconds, then drain. Rinse under cold water, then drain.
Arrange snow peas, spring onions, celery, turkey, and mango in a serving dish. Sprinkle salad with nuts and cranberries, then drizzle with curry dressing to serve.
