Sam Stern'S Chilli Con Carnie - cooking recipe

Ingredients
    450 -675 g chuck steaks, chopped or 450 -675 g minced beef
    2 tablespoons sunflower oil
    1 large onion, chopped
    3 garlic cloves, crushed
    1 green chili pepper, seeded and chopped
    1 bunch fresh coriander leaves, chopped
    400 g red kidney beans
    400 g chopped tomatoes
    2 tablespoons tomato puree
    2 teaspoons soft brown sugar
    6 fluid ounces chicken stock or 6 fluid ounces water
    1 cinnamon stick
    1 red pepper, seeded and chopped
    lime juice
    salt and pepper
Preparation
    preheat the oven to 180c/350f/gas 4 if baking. heat half the oil in a large casserole dish. tip in the steak(chopped small) or mince. turn quickly till brown.
    lower heat. add rest of oil onion, garlic chillies and coriander. cook for a few minutes until soft.
    add the beans tomatoes, tomato puree, sugar, stock or water and the cinnamon stick. stir. and bring to boil.
    reduce heat. cover. simmer very gently for 1 hour, stirring occasionally. add a splash of water if needed.
    add the pepper and stir. cover and simmer it gently for 40 minutes.
    taste. season with salt and a squeeze of lime.
