Ingredients

1 cup shortening
3/4 cup sugar
1 cup carrot, cooked and mashed
1 egg
2 teaspoons vanilla
2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1/2 orange, juice of
1 orange, rind of
1 tablespoon butter
1 cup icing sugar
Preparation

Cream shortening and sugar until fluffy.
Add carrots, egg, vanilla. Mix well.
sift together flour, baking powder, salt. Add to carrot mixture, mix well.
Drop by rounded tablespoon onto ungreased baking sheet.
Bake 16 minutes at 350\u00b0F.
Icing:
mix together orange juice, orange rind, butter, icing sugar.
Spread on warm cookies.
