Cheesecake Factory Bleu Cheese Dressing - cooking recipe

Ingredients
    2 shallots, very finely minced
    2 tablespoons vegetable oil
    2 ounces crumbled blue cheese
    1 1/2 cups buttermilk
    1/2 teaspoon salt
    12 cups mixed baby greens (mesclun)
Preparation
    Combine all ingredients except greens and whisk until smooth or blend at low speed.
    Chill.
    When ready to serve, put 2 cups greens on each salad dish and top with dressing.
