Moorish Oysters - cooking recipe

Ingredients
    2 dozen pacific oysters, on the half shell
    1 bird's eye chili, fresh
    2 tablespoons coriander, finely chopped
    1 1/2 limes, juice of
    1 1/2 garlic cloves, crushed
    1/4 teaspoon sea salt
    1/4 cup extra virgin olive oil
    2 tablespoons red caviar
    lime wedge, to serve
Preparation
    Cut the chilli in half and discard the seeds, chop the chilli flesh and combine in a small bowl with the coriander. Add the lime juice, garlic, salt and olive oil and mix well together. Spoon onto each of the oysters with a little caviar.
    Serve with the lime wedges.
