Lemon Luscious Snow Cap Cookies - cooking recipe

Ingredients
    1/4 cup of softened butter
    1 cup granulated sugar
    1 teaspoon lemon extract
    1 tablespoon freshly grated lemon zest
    1 3/4 cups all-purpose flour
    2 teaspoons baking powder
    1 cup coconut
    1 cup macadamia nuts
    2 large eggs
    1/2 cup powdered sugar, to roll cookies in
Preparation
    Preheat oven to 350\u00b0.
    Cream butter and sugar.
    Add lemon zest, eggs and extract.
    Stir in flour and baking powder.
    Add nuts and coconut.
    Shape into 1 1/2\" balls.
    Roll in powdered sugar and place on greased cookie sheets.
    Bake for 18 minutes until the edges are set.
    Cool a minute or two on cookie sheets, and remove to wire rack, and sprinkle powdered sugar over the tops as cookies continue to cool.
