Fresh Pineapple Fritters - cooking recipe

Ingredients
    2 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon salt
    2 large eggs (lightly beaten)
    1 1/2 cups milk
    2 tablespoons vegetable oil
    1 pineapple (cored and cut into 3/4-inch slices, then in quarters.)
    oil, for frying
Preparation
    Sift the flour together with the baking powder and salt.
    Combine the eggs with milk and 2 tablespoons of vegetable oil.
    Stir into the dry ingredients.
    Dip pineapple quarters into batter and drop pieces in oil, frying at 375F until golden brown.
