Meatless Lasagne - cooking recipe
Ingredients

1 1/2 tablespoons butter
1 1/2 cups mushrooms
1 cup onion
25 ounces pasta sauce
1 cup mild salsa
1 egg white
1 cup cottage cheese
1/2 cup parmesan cheese
6 oven ready lasagna noodles
1 1/2 cups mozzarella cheese
1/4 cup parmesan cheese
Preparation

Sauce: Melt butter in a large saucepan and add mushrooms and onion. Saute until soft. Add pasta sauce and salsa and simmer stirring often for approximately 3 minutes.
Cheese filling: Mix the egg, cottage cheese and 1/2 cup parmesan and set aside.
Assemble in a 9X9 pan as follows:.
1/3 cup sauce.
3 lasagne noodles.
1/2 cottage cheese mixture.
1/2 of the remaining sauce.
1/2 of the mozarella cheese.
3 lasagne noodles.
remainder of cheese mixture.
remainder of sauce.
Remaining mozzarella.
1/4 cup parmesan.
Bake covered at 350 for 45 minutes uncover and bake 10-15 minutes longer. Let stand 10 minutes before serving(optional)
Serve with caesar salad and garlic bread.
