Fiesta Bean Salad - cooking recipe
Ingredients

1/4 cup olive oil
3 tablespoons lime juice
1/4 cup cilantro, chopped
1 teaspoon cumin
2 (15 ounce) cans black beans, rinsed and drained
2 red bell peppers, diced
1 1/2 cups corn, cooked
1 cup red onion, chopped
2 jalapenos, seeded and chopped
4 radishes, sliced (optional)
Preparation

In large bowl, whisk together oil and lime juice.
Add cilantro, cumin, salt and pepper to taste, mixing well.
Stir in beans, bell pepper, corn, onion, and jalapeno pepper.
Taste and adjust seasoning.
To serve, garnish with cilantro sprigs.
Serve at room temperature.
