“Green Butter” (Garlic-Herb Butter) - cooking recipe

Ingredients
    1 head garlic
    1 cup butter, softened
    1/2 cup flat leaf parsley, chopped
    1/4 cup fresh tarragon, chopped
    1/4 cup shallot, minced
    1 tablespoon lemon zest
    1/2 teaspoon kosher salt
    1/4 teaspoon black pepper
Preparation
    Wrap head of garlic in foil. Bake at 375 for 45 minutes.
    Squeeze the soft garlic from the head into a blender or processor.
    Add remaining ingredients. Puree until smooth.
    This recipe freezes beautifully. Sometimes I double or triple the recipe and freeze it for future use.
