Taste Of Oregon Frosted Meatloaf - cooking recipe

Ingredients
    2 lbs ground beef
    1/3 cup olive oil, extra-virgin
    1 tablespoon lemon juice
    1/2 teaspoon Dijon mustard
    1/2 cup dry breadcrumbs
    1/2 onion, chopped
    2 eggs, beaten
    1 teaspoon salt
    1/2 teaspoon pepper
    2 garlic cloves, minced
    2 cups mashed potatoes, hot (6 medium)
    1 egg, beaten
    1/2 cup mayonnaise
    1 teaspoon salt
    1/4 teaspoon pepper
    1/4 cup parmesan cheese
    sliced tomatoes, olives, mushrooms, pimiento or parsley, as desired
Preparation
    Combine the first 10 ingredients (everything up to the mashed potatoes).
    Mix well & shape into an oval loaf in a shallow baking dish.
    Bake at 350\u00b0 for 1 hour.
    Remove from oven & place on a baking sheet or heat-proof serving platter.
    Combine potatoes, egg, mayo, salt, pepper, and cheese.
    Frost the meatloaf.
    Broil until potato topping is golden brown & puffy.
    Garnish with tomato, olives, mushrooms, pimiento, &/or parsley as you like.
