Com Sot Ca Chua - Vietnamese Tomato Rice - cooking recipe

Ingredients
    1 tablespoon oil
    2 shallots, finely chopped
    1 garlic clove, crushed
    2 small tomatoes, finely chopped
    1 tablespoon sugar
    2 cups cooked rice
    1 green onion, diced
    salt & pepper, to taste
Preparation
    Heat Oil over medium heat, add shallots and garlic. Saute until soft.
    Add tomatoes and sugar, cook until thickened.
    Add Rice and stir until completely incorporated.
    Add spring onions, salt & pepper.
    Serve!
    Can garnish with coriander leaves, if desired.
