Vidalia Onion & Red Pepper Dip - cooking recipe

Ingredients
    1 cup chopped vidalia onion
    1/4 cup diced red pepper
    1 cup grated shredded swiss cheese (about 4 oz.)
    1 cup mayonnaise (Hellmann's or Best Foods)
    2 garlic cloves, finely chopped (optional)
    1 -2 chipotle chile in adobo, diced- use 1 with seeds removed for less heat
Preparation
    Preheat oven to 375\u00b0.
    Lightly oil 1-quart casserole. Combine all ingredients. Bake 25 minutes or until golden brown. Serve with your favorite chips, toast rounds or veggies.
