Willie'S New Orleans Red Beans & Rice - cooking recipe

Ingredients
    1 lb dried red beans, that have soaked over night in 7 cups of water
    1 green pepper, chopped
    1 medium onion, chopped
    3 celery ribs, chopped
    3 garlic cloves, chopped
    1/2 lb andouille sausage, sliced
    3 tablespoons creole seasoning
    hot cooked rice
Preparation
    Place all but rice into a 4 qt slow cooker.
    Cook, covered at HIGH 7 hours or until beans are tender.
    Serve with hot cooked rice.
    Note: Willie adds 2T baking soda into the pot just before it is done to reduce the gas in the beans, but be careful that you don't overflow the pot like my DH did.
