Creole Muffins - cooking recipe

Ingredients
    1 egg
    3/4 cup milk
    1/4 cup unsalted butter, melted
    1 tablespoon green bell pepper, minced
    1 tablespoon onion, minced
    1 tablespoon pimiento, minced
    1/4 cup American cheese, grated
    1/2 cup cheddar cheese, grated
    1 1/4 cups all-purpose flour
    1/2 teaspoon salt
    1 tablespoon baking powder
    1 tablespoon sugar
    2 tablespoons yellow cornmeal
Preparation
    Preheat oven to 400\u00b0F Coat 12 muffin cups with nonstick cooking spray.
    In a small bowl, mix eggs, milk and butter.
    In a large bowl, combine remaining ingredients.
    Add the egg mixture to the flour mixture and stir just to mix (there will be lumps).
    Pour into muffin cups and bake for 25 to 30 minutes, or until done.\u0014
    Turn out onto wire rack and cool slightly.
