Cheesy Potato Chowder - cooking recipe
Ingredients

1 1/2 cups water or 1 1/2 cups vegetable broth
3 medium potatoes, peeled and cubed
1 stalk celery
1 medium carrot, chopped
1/4 cup butter
1 medium onion, chopped
1/4 cup all-purpose flour
1 teaspoon salt (or to taste)
1/8 teaspoon pepper (or to taste)
1/8 teaspoon cayenne pepper (optional)
4 cups milk
8 ounces shredded mild cheddar cheese
4 ounces swiss cheese
1/2 teaspoon caraway seed
Preparation

Combine water, potatoes, celery and carrot in medium saucepan. Bring to boil. Reduce heat and simmer uncovered until veggies are tender (about 10 minutes).
Meanwhile, melt butter in a large saucepan over medium heat.
Cook and stir onions in butter until onions are tender but not brown (about 2 minutes).
Stir in flour, salt and pepper (and cayenne if using). Cook and stir about 1 minute.
Stir in milk and potato mix.
Cook and stir over medium heat until bubbly.
Stir in cheeses and caraway seeds.
Reduce heat to low and simmer uncovered until cheeses are melted and mixture is hot, stirring constantly.
