Baked Cod With Aloutte Cheese - cooking recipe

Ingredients
    1 tablespoon olive oil
    1 lb cod fish fillet (cut into 2 pieces)
    4 tablespoons alouette garlic & herb spreadable cheese
    3/4 cup fire roasted diced tomato, bell peppers, onions and garlic (drained)
    1 tablespoon parsley (dried)
    1/2 teaspoon italian seasoning (dried)
    2 tablespoons parmesan cheese (grated or shredded)
    butter-flavored cooking spray
    salt and pepper
Preparation
    Preheat oven to 400 degrees.
    Pour oil into baking dish, coat the bottom of the pan; arrange the cod fillets in the dish, pat dry with paper towel.
    Spread fillets with Alouette cheese spread; 1 tablespoon on each fillet, top with drained tomatoes, parsley, parmesan cheese, Italian seasoning then spray with butter flavored spray.
    Bake uncovered in preheated oven for 25 minutes.
