Peruvian Roasted Chicken! - cooking recipe

Ingredients
    1 whole chicken
    1/4 cup lime juice
    1/4 cup of fresh mint
    3 tablespoons extra virgin olive oil
    6 fresh garlic cloves
    1 tablespoon sea salt
    1 tablespoon lemon pepper
    1 tablespoon sugar
    1/2 tablespoon cumin
    2 teaspoons smoked paprika
    2 teaspoons dried oregano
    1/8 teaspoon cayenne pepper
Preparation
    Spatchcock the chicken and cut slits into the flesh of the muscles.
    Place all remaining ingredients in food processor till smooth.
    Marinate chicken in the paste for at least 15 minutes.
    Bake in a 12\" pan at 375* for 45 - 60 minutes, basting every 15 minutes.
    Serve with your favorite roasted root vegetables. (Can be done with the same marinade, in the same baking dish.).
