Macaroni & Zucchini Salad - cooking recipe

Ingredients
    250 g zucchini, sliced
    salt
    1 cup mushroom, sliced
    1 cup whole wheat macaroni, cooked
    3/4 cup light cream
    1/4 cup crunchy peanut butter
    1/2 cup mayonnaise
    1 tablespoon honey
    1 tablespoon white vinegar
    2 tablespoons lemon juice
    1/2 cup roasted peanuts
Preparation
    Place zucchini on kitchen paper & sprinkle with salt, allow to stand 30 minutes.
    Rinse zucchini under cold water and pat dry.
    Combine zucchini, mushrooms and macaroni in a salad bowl, chill while preparing dressing.
    Place all remaining ingredients except peanuts into a blender & whip until smooth but not too thick.
    Coat salad lightly with dressing, chill & serve garnished with roasted peanuts.
